Photography class-simply put is kicking my ass. I can't seem to get an A on any of my projects. How can a picture not be an A if you followed all of the requirements? This is where creative classes and their gray matter grading scales get to be a little frustrating. Not to mention that one class period is 4 hours and 15 minutes long...times that by three and you have my weekly total. Tuesday, Wednesday, and Thursday nights I spend in photography class and the rest of the week I'm trying to catch up on sleep, which hasn't been going well. <br />
<br />
Exercise-I've taken hot yoga classes and have fallen in love. Everything is wonderful except for the class. =) What I mean when I say that is...the class is extremely difficult when the room exceeds 95 some degrees and some guy's sweat drips on your yoga block. YUCK. The class is also difficult b/c I personally like to listen to music while I workout, but in hot yoga I have the privelage to hear every one's heavy breathing in the class, the instructer saying which pose to go into, and some occasional pass of a neighbor's gas (kidding! lol).<br />

What tv shows I've been loving right now-The doctors, Dr. Oz, Say Yes to the Dress, and now Jamie's Food Revolution. I just watched an episode tonight of Jamie's Food Revolution and I wish I could do exactly what he is doing. I can't wait to see what will happen. I applaud him for raising awareness to our diets. IT'S ABOUT TIME SOMEONE STEPS UP TO THE PLATE AND MAKES SOME CHANGES! (ehhh I guess pun intended =)).<br />

I had a simple strategy going into Easter. I had told my mom that she couldn't buy me any sweets because I knew I would cave and eat them all in one sitting, but she went behind my back and purchased my favorites: reeses peanut butter eggs and braach's eggs. I should have taken a picture of the cute little easter basket she made me for Sunday morning, but I had better things to do...like eating. Even though I ate way too many sweets, which I seem to be doing a lot of lately, I very much enjoyed the company of my aunt and uncle. We normally go to their house for Easter, but we decided to have it at our house. For dessert I had promised my aunt that I would make a healthy brownie recipe. The healthy brownie recipe called for black beans, and yes I did use a 15oz can to make them. They aren't pictured here because they didn't meet my sweet standards. Fortunately for my aunt and uncle, my palette was dissappointed, and they were sent home with the whole batch! <br />
<br />
The next day I decided my body needed some pampering after all the processed junk that went into it. Monday after my chemistry exam I decided to make salmon, topped off with a couple tablespoons of peach mango salsa (from costco), and some raw zucchini ribbons topped with a little bit of lawrys season salt.<br />

I'm also not familiar with this new round face that stares back at me in the mirror. It's almost like I'm having to reintroduce myself to myself. I had a spaghetti squash sitting in my refrigerator just begging to be eaten up, so I decided on this recipe for dinner last night. I almost used the squash to sub for my zucchini in my usual zucchini, pizza sauce, and chicken meatball combination (which I have been living on for far too long now), but I resisted! =) I need to learn how to shake things up with my recipes because otherwise I'll end up like my lastest post...with my face buried in the fridge or freezer or pantry. =O. I tweaked the recipe a little bit. I cooked the squash in the micro and scooped out the insides with a fork to make the "noodles". I placed 1c. of the squash noodles in a bowl, poured in 1c. of chicken stock, 1/4c. of chickpeas, about an 1/8th of a tsp of garlic, and salt and pepper. I didn't have any carrots, celery, or onion on hand (which I'm sure would have MADE the soup), so I ended up pairing the soup with a tossed salad. I drizzled some dijon mustard over some spinach, cucumbers, and mushrooms and called it a meal. =) Overall it was good, but I think next time I'll have to add something to the soup to liven it up a bit. <br />

I've never been any good at finding a balance. I've always struggled with the "all or nothing" mentality, and on Saturday it was clear that I would be in "all" mode. It started when I went on a college visit with my twin sister, a friend, and her dad. I plan on trasnferring next year, and my friend is determined to persuade me to attend the same college she will be attending next year, hence the college visit. The campus tour went a little longer than scheduled and lunch was delayed by a half hour. Now a half hour may not seem like a lot to you, but to someone who plans meals and snacks every 3 hours and is extremely anal about what she eats(me)...it's a long time! Delaying lunch time left me hungrier than ever (problem 1), and lunch was served buffet style (problem 2). Encouraged by the goodies surrounding me, I panicked and stuffed my belly with more food than my friend's dad. Can we say embarassing? YES! I may or may not have eaten 1.5 ham and cheese sandwiches with the fluffiest bread I have ever laid eyes on, 2 slices of doughy cheesy pizza, a waffle the size of my face with sugar free syrup and powdered sugar, three cookies (two of which were chocolate and one of which was a shamrock sugar cookie), an icecream sandwich, a bowl of self serve frozen yogurt that was a tad on the watery side topped with 5 or so marachino cherries and a handful of mini chocolate chips, and washed my lunch down with a tall glass of chocolate milk. When I was leaving the cafeteria I had two cookies (of the three I had listed above) in hand for the trip home. You think that's bad? It gets worse. When I got back to my friend's house I had a bowl of thin mint icecream. Later, when I had finally reached my house, I polished off some graham crackers and whipped cream, along with some <strike>unmentionables </strike>more food. When I finally got ready for bed, I prayed to God that my "food baby" would quickly subside, and that my once skinny body would come back. I knew that Sunday would be a new day and that I would get back on track. The one thing I forgot about after eating unhealthy (the way I did) is that when you do eat unhealthy you crave it more than you did before you indulged. <br />

YUP--that's right I made beautiful noodles out of zucchini, with my vegetable peeler ofcourse, and topped it off with pizza sauce and some chicken meatballs. Unlike pictured below, I didn't mix any broccoli in like I typically do to add more greens into my diet, but it sure was YUM!<br />

I also tried some coffee today while at Costco...the 100% colombia blend, Kirkland brand to be exact. Paired with my orange trident gum, it tasted strangely good. Sounds like an odd combo, but I thoroughly enjoyed the sample and went back for seconds. =) I don't drink coffee, but after today's sampling I think I may just start. It was delicious and I always need something to get me moving in the morning (my coke zero). We couldn't convince our mom to go out with us, but we did convince our old babysitter to come out on a "school night". We went to carrabaas for dinner. I did show up to the restaraunt hungrier than I should have, but I didn't overeat =). I had two slices of bread (from the bottomless and dangerous bread basket) =O, a bowl of minestrone soup along with the Spiedino Di Mare (altered the recipe to have all scallops, no shrimp, without the breading) with a side of veggies. It was so good! I wish I would have brought my camera along to take a picture of the amazing meal, although if I had brought my camera I would most likely not have remembered to take the picture before I woofed down the entree =). I couldn't even engage in conversation the food was that good! Enough about the food--wait, isn't it always about the food? =P Anyway after dinner we scurried over to the theater just in time to see the movie No Strings Attached. The movie theater was so empty it felt like we were VIP =) hahah<br />

This morning I woke up and ate a bowl of oatmeal. I've had this for breakfast for the past couple of weeks now and it never gets old! =) I never stir in the dollop of peanut butter. I always leave it for last! YUM!<br />

The start of my day went fairly well. I walked into my chemistry class not exactly confident about taking my chem exam, but left feeling like I had known the content well enough to get an A. =)<br />

The middle of my day I spent having a pitty party for myself. Some days you just have to have a good cry? Am I right? I cried about a variety of things...mostly over life and how I don't know what to major in yet and maybe some other things, but anyway I look back on the cry now and give myself a huge pat on the back! I credit myself for actually feeling my emotions at that moment because I never do that. I'm the type to bottle it all in, but not today! I felt so much better afterward!<br />
<br />
The end of my day after a good talk with my mom, we both cleaned up and headed to my favorite store in the world--COSTCO! We ran into a woman who looked like she was in her mid 20s. She, along with her four tired and hungry looking kids and her husband were debating on whether or not they should purchase the dried figs they'd come across in the aisle. My mom struck up a conversation with her, telling her that she and her sister were trying to decide on purchasing the same exact figs just the week before. Come to find out this lady was just as nutty about her health as we were. She told us about her natural skin care products she gets at health food stores and how she has watched food inc. and because of it has raised a couple of her own chickens along with a couple of pigs. It was so pleasant running into her and her family. When we were checking out of Costco she waved us to come over and try the figs she ended up purchasing. She was so sweet and turned out the figs were as well. I ran back so fast to the aisle where we had seen the figs and rushed them back to the checkout line. I hereby dud thee dried organic COSTCO figs a new favorite! =)<br />

Ok...so I did experiment with food; however, I experimented with the wrong kinds of foods. The holiday party I attended offered a nonhealthy "frost your own sugar cookie station" with no limit as to how many cookies you could eat, sweet n' sour meatballs, and not to mention the cute little weenies wrapped in crescent rolls. Everything was fair game! I was doing just fine with not eating anything until Kelsey reeled me in by asking if I wanted to frost a sugar cookie. I thought...sure, why not. I haven't had sugar cookies in God only knows how long. I'll just have one. One cookie never ends up being just the one cookie. The one cookie turns into two and before I knew it I was taking two cookies and sandwiching them together with colorful green and red frosting, topping it off with sprinkles just to be sure it looked extra pretty before I stuffed it away in my belly. My brain hadn't gotten the "STOP NOW BEFORE YOU PUKE" signal so I kept right on going. I started feeling a little sick by the 13th cookie...or was it the 15th? I DON'T KNOW! I lost count! I tried some meatballs before diving into the cute little weenies wrapped in crescent rolls that were displayed on a cookie sheet, on the stove top. Before heading home I allowed myself a couple handfuls of none other than the most amazing bbq chips on the planet!!! I couldn't possibly leave the party without sampling everything! If it hadn't been for Kelsey I wouldn't have come home feeling like a big TOTAL piece of CRAP or written about any of this b/c it wouldn't have happened!!!! Grrr...It's amazing how awful I feel when I allow myself to eat like this. I've eaten so healthy for the longest time that my body screams at me whenever I feed it junk. I'm writing this blog right now in hopes that I can avoid this from happening ever again. Binging isn't fun. Binging doesn't make me feel good and there are ways I can prevent it. I've come up with a cheat sheet to help me get through the holidays and most importantly life! Social gatherings, unfortunately, do involve food. <br />
<br />
<br />
<ul><li>Eat a snack before you go to the party. It will keep you full and most likely keep you from snacking on holiday goodies.</li>
<li>Always drink plenty of water. This means your stomach won't have room for 15 cookies, 10 or so meatballs, 5 weenies, and a couple handful of chips. </li>
<li>Set goals. If you know there are going to be sugar cookies at the party aim to eat only 1 or 2. Shoot for one, but if you have to have two eat the second cookie, but then stop after that.</li>
<li>Always carry around a deck of cards in your purse. If you had your two cookies and your eyes are still wandering...relocate (somewhere preferrably far away from the junk food) and suggest playing a card game with the girls at the party.</li>
<li>Look at all of your options before diving into something. Try to choose the healthiest option. For example, I should have gone straight for the meatballs because they have protein where sugar cookies are simply empty calories. </li>
<li>Know the 20 minute rule. Let yourself have one cookie, walk away from the scene, and once 20 minutes is up your body will be able to tell you if it can stomach another.</li>
<li>Enjoy it. No--really! Focus on the sugar cookie you are eating and really taste it. Treat it like wine tasting. Really engage all of your senses and enjoy that moment of indulgence. Savor each and every single bite. It's more fun that way instead of just shoving food in your mouth. What's the point? Eating should be fun and enjoyable! </li>

I tried replacing sugar with some frozen mashed bananas in a muffin recipe...turns out that isn't a good idea! lol The muffins may not have turned out the way I had wanted, but I did have success when I returned to the kitchen a few hours later! Embarassingly enough I've taken this healthy eating too far and now I weigh in at 99.1 pounds. <br />
<br />
On a positive note I've had nothing but wonderful experiences in the kitchen today. This deserves a HUGE pat on the back and maybe 5, 6, or 7 gold stars ;). For all of the ones who don't know me...I'm slightly challenged when it comes to everything related to cooking and baking. I'm a prepackaged, low calorie kind of gal that is recently trying to learn how to change my ways and learn the following: patience, cooking/baking, and trying new recipes! =)<br />

For Lunch: whipped up a veggie burger (2 mini patties to be exact) and sandwiched each part in a La tortilla wrap! I put my sweet tooth to rest with a 1/4 c. of strawberries, 1 tsp agave nectar, and 1/4 c. of fage greek yogurt.<br />
